A Thanksgiving Blessing & A Pie Your Body Will Thank You For

As we pause to count our blessings this Thanksgiving, I’m filled with gratitude for you. Thank you for being part of this community dedicated to vibrant health.

The Thanksgiving table is a place of celebration, and that absolutely includes dessert! This year, I want to share a version of the classic pumpkin pie that nourishes you from the inside out. It’s every bit as yummy as the original but made with ingredients that truly love you back.

Nourish Your Tradition: A Gut-Friendly Pumpkin Pie
We’re sharing a creamy, spiced filling sweetened naturally and a simple crust free from refined flour and vegetable oils. Your taste buds and your digestion will love it!

For the Almond Flour Crust:
2 cups fine blanched almond flour
3 tablespoons melted coconut oil (or grass-fed butter)
1 tablespoon maple syrup
1/4 teaspoon sea salt

For the Pumpkin Filling:
1 (15 oz) can pumpkin puree
2/3 cup pure maple syrup or raw honey
2 large pasture-raised eggs
1/2 cup full-fat coconut milk
1 tablespoon arrowroot powder or tapioca flour (helps set the pie)
1 tsp pure vanilla extract (or more to taste)
1 ½ tsp cinnamon
½ tsp ginger
¼ tsp nutmeg
¼ tsp cloves
Pinch of sea salt

Instructions:
Make the Crust: Preheat your oven to 350°F.  In a medium bowl, mix the almond flour, melted coconut oil, maple syrup, and salt until a dough forms. Press the dough evenly into a 9-inch pie plate, going up the sides. Pre-bake for 10-12 minutes, until lightly golden. Remove and let it cool slightly.

Make the Filling: In a large bowl, whisk the eggs. Add the pumpkin puree, maple syrup, coconut milk, vanilla, and all spices. Whisk until completely smooth. Sprinkle the arrowroot powder over the mixture and whisk vigorously to combine without lumps.

Bake the Pie: Pour the filling into the pre-baked crust. Bake for 45-55 minutes, or until the center is just set (it should have a slight jiggle but not look liquid). A toothpick inserted near the center should come out clean.

Cool Completely: This is super important for the perfect slice! Let the pie cool on a wire rack for at least 2-3 hours, then refrigerate for another 2-3 hours (or overnight) to fully set.
